Come to think of it, I think it depends if I'm pub crawling in a group or not. When I've been in Bamberg with a group of friends we've preferred Stöhrenkeller since there have been plenty of tables to sit and it's quiet enough to have conversation. When pub crawling alone, I'd rather go to Stilbruch. It's easier to blend in and there's more going on around you and it's easier to strike up conversation with a stranger. I'll never forget this young couple I met on my first visit to Stilbruch. They asked me what I was doing in Bamberg. I told them I was on holidays. They looked at me like I was freaking nuts. They actually said to me something to the affect: "No really, tell us why you're really here because why would anyone come to Bamberg on holiday!?"
