Syphon filling |

Potential problems filling a syphon (or other container) are obvious: contamination, oxydation and/or diacetyl. Filling a syphon does ask some caution if you want to keep it fresh for a longer period: absolutely clean container, and no oxygen in the container before it is filled. Brewpubs who fill syphons usually have some special filling equipment that can purge and prepressurise the siphon with CO2. Unfiltered beers with some residual fermentable sugar may be subject to a renewed aerobic fermentation (if oxygen gets included into the container), possibly resulting in massive diacetyl. |
