Ghent

I can't recommend any accommodation. I recall that I stayed in a dump! In the centre, there is Het Waterhuis aan de Bierkant and De Trollenkelder. To the west of the centre is HopDuvel. Highly recommended. Ghent is just as nice as Bruges IMHO, without the crowds of tourists.
