Hirschbrau use those swing top stoppers - don't know the name for them but the same as used by Grolsch (do they still use them?). There is definitely some secondary fermentation going on, as you have to be careful not to shake the bottle otherwise you will lose half its precious contents! I'm pretty sure that this is not caused by adding CO2 - I've been drinking beer for 50 years and think that I've got a pretty good palate for it by now! |
