The knocking on the table is also general usance with the locals at the various brewery taps in Bamberg itself, usually however limited to the Stammtisch(e). For the smaller rural breweries it is indeed also still common practice. And yes - Thea is indeed very efficient in serving, if Hans himself isn't doing it.
