Gerhard, thast's very interesting - I think that Guinness used to use the nitrogen/CO2 mixture in the kegs from the now defunct Park Royal London brewery. These had the propellant built into the keg, which was good and bad: good because it was probably better than all-CO2; bad because they wouldn't connect to the pub 'python' system, meaning more work for the poor landlord! I'm not sure that I understand your last paragraph - do you mean that you tap the keg a few days before use, as I've seen bars in Germany tap the keg and then immediately use it? Regarding other means of serving: in England, the old pubs often used to keep their casks away from the bar area and fill jugs for transfer to the glass. |
