Wine cultivated in Franconia is mostly white wine. My personal recommendations: Best of Franconian white wine is 'Würzburger Stein', followed by 'Kitzinger Hofrat' and 'Volkacher Ratsherr. (All these are place names.) But you can always query the waiter/waitress; there are many more good ones, and you get what you pay for. Most common grape varieties are 'Silvaner' and 'Müller-Thurgau'. Don't ask for 'Riesling'; this grape variety is rare in Franconia. If you are desperate to drink red wine, try to get a 'Spätburgunder' (a grape variety a.k.a. Blauburgunder, a.k.a. Pinot Noir) and avoid 'Domina' and 'Dornfelder'.
