I would not have personally thought to use "crisp" for hefeweizen, but that was a quote from an importer's web site. "Crisp" as applied to beer is a bit of a subjective term, I suppose. But to me, "crisp" implies "quickness". Like when you bite a vegetable (like Celery), and it is crisp. So, with a "crisp beer", you get a quick, sharp feeling on the tongue, mostly due to the carbonation (if the sharpness is due to hop bitterness, I would use the term "hoppy", not "crisp"). |
