Wurst gradient |

The difference is quite the same as between different butcher shops. The basic recipe is the same, but there are small differences in the art of seasoning (and may be the content of water and grease), and so the flavour varies a little. To my taste the Munic sausages in general are rather bland, whereas the Bamberg ones are a little bit more spicy. Of course this is a matter of purely subjective liking, and there are people who prefer the less spicy ones. Other people feel there is a gradient of sausage quality from northern to southern Bavaria (and declining further on to Austria). But do you know the difference between "catholic" and "protestant" Bratwurst? |
