I'm not much of a fan of the Forchheimer Brauereigaststätten, so take my opinion FWIW, but in any case you should be aware that Hebendanz is now a so-called "Raucher Club", whereby they get around the Rauchverbot by requiring customers to join their membership. If you're a smoker, I suppose it's a great deal. (If the courts overturn this legal loophole before your trip though, the point is moot.) If you're there on any day other than Mi & Do, there is great "warmes Essen" at lunch at Roppelt's Keller. (At weekends there's Brotzeit for lunch as well.) Some of the best countryside Bierkeller food around IMO. Or lunch up at the new Friedel's brewpub on the Kreuzberg. The food is good, the menu big, and the kitchen nice to look at. Plus--it's downhill from there, of course, so easier on the belly. The only other places I'd suggest are Huppendorf and Br. Ott in Oberleinleiter, but I wouldn't necessarily suggest them inSTEAD of your other ideas...time permitting of course. How are you getting to your starting points? If you're looking for hiking maps, be advised that the Fritsch 50.000 Bamberg-Forchheim map might be hard to come by, as they're revising it for next year, and the current stock is pretty short. The Compass appears to have been updated in the last couple of years though.
