It is horses for courses really. The secret is to condition the beer properly in the first place and not to keep and serve it too warm. If you do keep it too warm and have already lost most of the condition, then you knock the shit out of it. That's the problem in the South of England in my humble opinion. Not sparklers per se, but general poor conditioning and far too warm temperatures. There isn't a hard and fast rule about sparklers, but there should be about keeping cask beer. Soft spiles anyone?
