Also, be sure to visit the Spezial Keller in Bamberg. This is a "must visit" during good weather. The Wilde Rose Keller (nearby) is also very nice, though without the spectacular views of Spezi-Keller. You can also stop in Mahr's Keller while you are up on the hill, too (good food there). If you only have a couple of days in Bamberg, and it is your first visit, you really don't need to take excursions outside Bamberg, though Nick gave you excellent suggestions.
