And Schl's not really a fair example, because the rauch really covers a lot of what can go wrong otherwise. My haul of this winter's bocks from a few different breweries is holding up so far, unrefrigerated in my Keller. But that's Bock. I'm in danger of letting it go bad at the rate that I'm drinking it though--I just don't have the liver for so much Starkbier any more. Shall have to try harder. A Bock a day. Or every other day.
