Mahr's hefeweizen is quite good, and I was told by someone at another small brewery in Germany that they actually use Mahr's yeast for their own hefeweizen. I am not sure if you will be able to get a sample of the Mahr's yeast, but you can ask. I do think that (high) fermentation temperature is crucial for getting the flavorful fruity esters and phenolics in a hefeweizen, but I am not a brewer. Cheers |
