Landbier/Kellerbier specs

The descriptions look pretty good -- better than a lot I've seen. As for the hops, you'll see a lot of Spalt as well as hops grown in the Hallertau region. Many of the latter are not what you might find in a North American homebrew shop under "Hallertauer" though. For example, Spezial in Bamberg uses some "Hallertauer Nugget" -- which is the US bred Nugget hop grown in the Hallertau -- for bittering. Similarly I've seen a lot of "Hallertauer Perle." I also seem to remember seeing Hallertauer Tradition, which is what most would call a "Hallertau variety." So really most good German varieties would work.
