Joelle, I not really familar with the White Labs lager yeasts -- but low sulpher would be a good choice. All of their yeasts are good so I'd give it a try. Most Franconian breweries lager from 6-8 weeks, depending on the beer (and demand -- summer means shorter lagering times). I was always of the impression that kellerbier was lagered on the shorter end of the range, though I realized that I don't have any specific examples (gotta ask some questions.) Its must be somewhat short or the beer would be clearer, even without filtering. I'd try 4 weeks lagering and see how the beer tastes. One homebrew club entered a kellerbier as an "experimental beer" with a description from John Conen's book and one a 3rd place in the nationals last year (or the year before). I'll have to dig that up and get in touch. |
