Outside Bamberg I need 10 or so recommendations

I'm headed to the Bamberg area for the first week of December. I want to get beyond the City of Bamberg and out into the countryside. I'm looking for the must see's and not miss's. Would like to get the most out of the trip and have done a fair amount of research but would still like to get a 'poll' of those who visit the Franconia Beer Guide. ToddA
