Accommodation in or around Bamberg

Did you look on the German hotel-booking site www.hrs.de? You're right in that there's not much during your dates of stay, but I did find a double at the Kaiserdom hotel, and when I expanded the search radius, I got nine hotels, including the Franken in nearby (and train-friendly) Forchheim.
