More Brewery Closings -- What is a brewery? |

| Max seems to have continued the very old tradition of the communal brewery where the mashing and boiling of the wort was carried out in a communal brewhouse, perhaps by a peripatetic brewer, then taken away by individuals - pub owners or private individuals for fermentation, lagering and eventual consumption on their own premises. Communal breweries still exist in Sesslach and Neuhaus/Pegnitz (and probably other locations). John Conen |
