I know three ways of spotting real casks: - a brass tap positioned in the venting hole at the top of the barrel. It's used much like a spile in a British cask. - the presence of a wooden mallet close to the barrels. This is used for tapping a fresh barrel. - wedges being used to adjust the tilt of a barrel as it empties.
