Whilst looking back in time to find the company that makes the 1000 L Kellerbier-in-a-bag system, I saw they have a nice little schematic for a 12 hl (?) Brauhaus.


Note the primary fermentation time of 7 days and lagering of only 21 days. Also, I don't really follow the schematic with the chiller (Würzekühler) being connected to the Läuterbottich. Can't make out the symbols well enough, and it's been many years since I've studied such schematics. I guess where lines cross, they are also connections. Anyone?

Also, what's the slim, vertical thing to the left of the Läuterbottich -- those taps to observe the clarity and the recirculation pump (what many Yank homebrewing hipsters mistakenly call "vorlaufen")?

Wonder how common these systems are. In the case of Roppelt and Rittmayer (Aisch, not Hallerndorf), it's unfiltered, naturally-carbonated dispense.
