Grolsch is very sweet, yes. The Amstel is very dry, but it came across to me as "harsh". With a year on it, okay, that'd be worth trying. I don't recall coming across Heinekin. Steenbrugge was quite lovely at the hotel bar across the road from the house where we stayed (60 € a night!).

Which are "top" or "bottom" fermented though, that's the question, to use those two less-than-ideal terms. I have nothing against top-fermented bock, especially if it's explained on the label.

And what about the smoking thing? I don't recall any of the places in Utrecht having smoking cabins, and then there was one place in Naarden-Vesting that appeared to be flaunting the ban entirely (we didn't go in!). Could a little brewpub operate successfully in that part of the country completely smoke-free? Seems to me in Utrecht, at least, yes.
