If you can possibly make it, I would like to recommend Gold Ochsen at Spielbach (whisper in B-W but still in Franken).  It's a truly wonderful Stube, with a real great beer (Special) but, more important, a fantastic atmosphere and character.  The only problem is that it is difficult to get to (nearest big town Rothenburg) and has tricky opening times (Mon-Sat 18.00 - 22.30 and Sun 11.00 to 22.30).  But if you can possibly make it, it is worth the effort.
