So, as others here have said, there's nothing special about fermenting and lagering U other than leaving the tank open enough so that pressure doesn't build up. Which is what the word 'ungespundet' means.

The bubbles stopping is the signal for the end of primary fermentation, which with top fermentation is a matter of days (sometimes a couple of weeks) rather than the 8 weeks for bottom fermentation.


Primary fermentation for untergäriges Bier lasts up to a week (as brewers have told me and as I've seen on BierTV), then the secondary fermentation / lagering lasts for a couple of months...ideally, at least.

Yes, Fred's photos certainly don't show what I think of as "horizontal" tanks!
