It doesn't work that way, Nigel. You don't necessarily choose the pub - it chooses you. By that, I mean they tend to rotate opening times among them. One is open and serves, the other two are (usually) shut. When the open one closes, the next one opens. It's rather like how the Zoiglstub'n work in the Oberpfalz.
