I absolutely agree on the conditioning business! Actually, at the time of my last visit to Salzburg, I would've been *somewhat*-bigger-is-better; I was already out of my long IPA/barleywine/Belgotrippel phase, but still preferred bigger lagers. It was my first visit to the UK in 2006 that put me on lower-gravity beer, though I'd already developed a taste for natural conditioning by then via Kellerbier.
