Hi all and thanks to all for so much great information! I'm from San Diego but live full time in Peru for over 10 years, with my Peruvian wife and daughter. I work in cacao and chocolate, specifically my company buys extra fine heirloom cacao beans raw, and i do all the post harvest processing (fermentation, drying, selection, etc), in campo, where I live with the farmers during harvest season. Then we ship the beans to Switzerland and make an ultra fine flavor couverture that we sell to select chocolatiers in Europe, North America, Australia, etc. I also make chocolate for the latin american market in Peru, from our same beans. I love beer but I'm not an expert like you guys, don't have the vocabulary, but i discovered years ago that there's more than mass market pale lagers, and now I can't drink them. Kind of a problem here in Peru where there are no alternatives. When I go to the US, and especially San Diego, I revel in the micro brew scene there. I pray each day that some craft brewers take hold here. And in a few days i'm taking a business trip to Europe and taking advantage of proximity to go to Bamberg for my first ever beer themed trip. Why not start at the center and work out from there? I hope to be able to contribute as i grow in understanding of beer. Salud!
