Homebrew Twang?

I've not been brewing the past few years, but I was always taught you wanted a good, strong rolling boil (as opposed to a "simmer") -- don't know if this is "hard" or not. What you are doing is driving off some of the volatile compounds in the malt that can lead to off flavors (e.g. DMS, etc.) That being said, the usual cause of what in the US is called "homebrew tang" is underpitching of yeast -- though I guess there are many sorts of "twang" :)
