Yeah, in general, Bio-Bier is pretty lame. Weißenohe appears to suffer in general from over-sparging, assumedly trying to squeeze every last bit of sugar from that malt. The only American organic microbrewery I can recall is Butte Creek, whose beer was also pretty lame, at least back in the 90's. Bio-Weizen seems just fine though, which I buy to make soup with. And then a bit gets sampled in the process, of course. Can't call my Hausbräu "bio" though, owing to the non-organic hops. I did have a conversation with an Oregon hop farmer at the Brau-Beviale here in November, who was un-moved by my offer to pay 20-30% more for organic hops. Nice guy though, and will look him up if I ever get back to Independence, OR. Used to drive by his farm sometimes on my way to work, when I took the highway/Landstraße instead of the freeway/motorway/Autobahn. My mother grew up on a farm in southern Minnesota, born before WWII. She says her dad "couldn't afford" the then-new herbicides (assume this was later, in the 60's), and she and her 11 siblings spent more time pulling weeds in the fields than anything else. It was "endless work". So she grew up herbicide-free, at least.
