Gravity pour (bayrischer Anstich)

In my experience, having tapped various barrels of German beers at UK beer festivals (with Herr Schellenberg) from Dusseldorf, Franconia and Munich, you still need a hammer to drive the tap in and break the seal. It definitely doesn't need a bang, but a decent tap does the trick. Making sure the tap is off is pretty basic common sense ;) The "Federventil" can be driven into the top of the barrel with the palm of the hand. It is similar to a cask real ale barrel, with the "shive" on the round top of the real ale barrel and on the flat top of a German barrel. These are used to insert the spile to control air flow. The German "Federventil" is a clever device which can vary the air flow by a screw - this allows for slower pouring if the beer is lively and quicker once settled down.
