Traditional homebrewed pale ale of 4-5% abv can be bottled within 7 days, but then you have to prime the young-beer with sugar or malt before it goes in the bottle in order to carbonate it. And that requires 10-14 days' bottle-conditioning time. My accelerated bottling method short-cuts that 10-day wait. Also, this beer is under 3.5% abv, and the yeast simply works quicker than what most other homebrewers brew. When I was still doing the "normal" priming method, I bottled after 3-5 days in fermentation. I used to also do a secondary fermentation in the past, but kept hearing from other people about how unnecessary this is for such beer as low- or normal-gravity ale. The idea isn't new, though. I've read in homebrewing books (rather primitive ones) about bottling without priming, when the primary fermentation is not completely done. The only negative aspect is the thicker sediment in the bottle, but with US05, or especially Nottingham, this isn't really a problem, as it sticks pretty well to the bottom. Actually, I read about this method in a German homebrewing book at the book store once; probably the same book that suggested using nappies (US diapers) for lautering. And to chill the hot wort after boiling, simply dump it from one big bucket into another over and over and over again!
