Also forgot to note that two aspects of my homebrewing limit the ...erm... refinement potential. First, water treatment. I don't do any, and probably should, as the water's fairly high pH value and the mineral concentrations suggest (as I've been told, anyway) that I'd get a "cleaner" beer if I did some treatment. Anyone interested in the city's report on our water can see it here: < http://www.estw.de/cms/Energie_Wasser/Wasser/Trinkwasserqualitaet/Trinkwasserqualitaet.html > (ours is Wasserwerk Erlangen Ost) And also, my accelerated packaging routine does lead to quite a bit of yeast sediment in the bottle, which is not necessarily a bad thing, of course, but there it is. I try to bottle the beer when the primary fermentation is about 85-90% done, whereby the remaining fermentation in the bottle eliminates the need for priming (and thereby eliminating the risk of violating the Reinheitsgebot by using sugar!) and most importantly, reduces the cycle time of having quite drinkable beer from 2 - 3 weeks ( 4 days in primary, 10+ days in the bottle) down to a week or even less. Yes, our beer is extreme, though not really in the way that one might *think* an American would make "EXTRE3ME BEER!!1!". It's extremely low in alcohol, so extremely safe to consume, yet extremely hoppy, keeping us happy.
