Plastic will absorb flavours, aromas, and theoretically colours over time. The surface is also not as slick as glass, or at least won't remain as slick over time due to abrasion, and so represents more of a contamination risk. Theoretically at least. It's just not as ideal of a material as glass or SST. My very first batches were fermented in plastic, then I quickly moved on to glass, and then retired the plastic fermenting bucket for use in bottle cleaning operations. It's also nice to watch the fermentation in action through the glass. (Nowadays however, I do the fun primary fermentation in the SST pot so I can't see it anyway.) And use only food-grade plastic, of course!
