Bamberg visit - Mahr's & U

Mahr's will serve their bottled "U" when it is felt that there is not enough time to finish a barrel. They will only tap a barrel of "U" when they can finish it the same day (I think the same goes for the Helles). So, they are doing this precisely because they DO care about the beer. I am not sure why you began discussing kegged beers. As far as I know, Mahr's does not dispense any beers from carbonated kegs, only from gravity barrels. Furthermore, do we know for sure that Mahr's adds CO2 to "U" when they bottle it? I really do not know (though I agree that it is likely that they do so).
