There are loooong bus connections to Huppendorf, which actually pass conveniently by other brewery towns like Oberleinleiter (excellent) and Heiligenstadt in Oberfranken (funny little place, sweetish "export" Lager) which you can dig up at diebahn.de. Biking up there would be a challenge if you're not used to biking uphill. You've got a 550 meter ridge to climb, which is about 220 meters higher than Bamberg. I'd suggest planning 2+ hours for the ride up (allowing for stops and what-not) and a bit more than an hour for the ride back. OTOH, I don't think the Vollbier up there is any better than you'll find it at Café Abseits--it's gas-driven, not ungespundetes or anything. You could get to a few more nice places nearer Bamberg or other stations in the same time you'd take getting to Huppendorf and back. Bussing to Tiefenellern or Scheßlitz with the bikes would make the trip shorter, but negotiating the buses with bikes could also be a bit of a trick. Taking the train to Ebermannstadt and biking from there is an option also--through Heiligenstadt and Oberleinleiter.
