Kellers open?

Hello all, The wife and I have 2 weeks left in our 6 month Munich stay. We want to make it up to the Kellers between Forcheim and Bamberg, especially the Forcheim Kellerwald, Kreuzburg, and Witzgall. We have this and next weekend as options. My question is how reliably open are these kellers this early in the season? How good does the weather need to be to ensure they are open? This weekend looks like 18 or 20 degrees and quite cloudy with a chance of rain. Is that risky enough that we should hope for better weather next weekend? BTW, I also welcome any recommendations about other great Kellers in the area or just places that have noteworthy seasonal beers right now (we have tried most of the year round beers in the region).
