I got very confused the other week on a visit to St Georgen, in Buttenheim, since their unbunged beer in the lagering tanks all had pressure control on them, with gauges reading 0.7 bar g (i.e. 0.7 bar gauge or 0.7 bar above atmospheric pressure. Surely, if unbunged, the reading would be zero, i.e. atmospheric pressure. I've read somewhere, that such beers are heavily hopped to preserve them during the unbunged lagering period, but if they are under a blanket of carbon dioxide under pressure ... Perhaps the unbunged only refers to the dispense from the barrel?
