If you're looking for a modern-day Polster brewery, there doesn't seem to be one any more. I wouldn't be surprised if the Polster family at Held-Bräu were found to be your distant relatives, though. I know there was a Scheidt brewery once, but in Pennsylvania rather than Germany. Not likely you'd find one in Franconia, as Scheidt is very much a localised name, very Westfalian, especially common in the Rheinland, and also found to a lesser extent in the Saarland.
