Landbier/Kellerbier specs

First off, as with Belgium, you have to forget about defined "styles" when thinking Franconian beer. The breweries brew what they want and other than broad categories (i.e. a bock will be stronger, a dunkel will be darker, etc.) "style" is not generally a consideration. "Lagerbier" is pretty much a generic term -- thats what a brewery will often call their beer if they don't have anything else to call it :) If I had no other information than the name, about the only thing I would be certain of is that it is bottom fermented, although the probabilities would be that it is pale. (If it wasn't, they'd probably call it Dunkel or Schwarzbier) Spezial calls their rauchbier "Lagerbier" so you can never be sure. As for Kellerbier/Landbier,generally speaking, I have found Kellerbier to be paler and hoppier, landbier to be darker (i.e. amber) and maltier. ("Landbier" is a term used throught Germany -- I'm just talking Franconia -- and my experience is really just Oberfranken). Landbier is probably more likely to be filtered than kellerbier, but that's not a certainty. To complicate matters even further, you can throw in Ungespundet into the mix :) -- though the ones I've had (not that many) would fit into the general "kellerbier" category. As for grain bill/hopping -- I've never brewed either (too busy the past few years to brew) but for a kellerbier I'd take a good helles recipe, up the bittering hops a bit and add some flavoring hops (but not too much). As for yeast, I'd pick a lager yeast that doesn't throw a lot of diacetyl, because you don't want to have lager it for a long time. I really have to get the archive function working -- we had a long discussion about this a couple years ago. but it's scrolled off the board.
