As an alternative to the Bayern ticket, DB suggest a Flexpreis ticket but you can only get that on the sectors from Nordostbhf onwards and not from Der Flughafen.

I don't see that. I see the same Flexpreis from Nürnberg Flughafen:

It's not giving you the Bayernticket option because this price is cheaper than the Bayernticket. Wot - have you got money to burn?

Why would this ticket be an inconvenience? If anything, it's more convenient because no faffing about with writing your name and all that.
