Interesting website. I don't think that there's any evidence to suggest that beer is better from wood than from a steel cask. Nowadays, beer is not lagered in barrels but in tanks (usually conical?) and the barrels/casks are only a means of transportation. Of course, brewery pubs are tending towards direct delivery lagering tanks or similar arrangements such as Roppelt's bag method. We used to serve Wadworth's 6X from a wooden cask and I don't think that it was particularly better than the real ales we served from steel casks. I don't think that the beer stays long enough in the cask for it to be materially affected. Much more important is the added CO2 in so much of Franken delivery methods. |
