This is always a issue of interpretation of the data. Could adding pure hop extract be counted into adjunct-free? Many believe yes, because it is made of hops. Many breweries uses carrageenan (https://en.wikipedia.org/wiki/Carrageenan) or similar to clarify beer - this does not need to be on label. Weyermann produces barley sour malt, where sourness is based on leaving the malt for some time in very sour water (or so). They also produce Sinamar, a liquid used to colour (darken) the beer which is widely used. They clame that for both they fullfil purity law. In large cylindro-conical fermentors (as they have in all breweries that produces beer under Heineken mark) it is often used some silicon-oil based adjunct in order to decrease height of the foam in fermentor. Again, this is something what you could not find on the bottle label. Same with yeast - nowadays are used specially treated yeast strains that fulfill many critierias, as high tolerance to working in very tall fermentors, high alcohol tolerance (Heineken etc. are brewered e.g. as 20° Plato and then - before bottle filling - diluted to 12° or so), and they provide reasonable results in a week (including conditioning, e.g. 60 hours fermentation and 130 hours lagering) - comparing to a 8-10 days for fermentation and 1 month for lagering at usual franconian brewery... And these will still be in order to purity law... |
