With bitterness it is simple - when brewing batch of beer, boil takes usually about 90 minutes. If you add hops at the beginning (or even before) of the boil, it brings bitterness If you add hops at later stages (like 15 minutes before the end or even after the boil), this brings aroma and taste, but nearly no bitterness It is up to brewer to balance amounts (and types) of hops added and addition times. Knoblach is well-known for their bitter beer, so no reason to change it...And that makes the difference to other breweries near by. Personally I like this small differences village by village, brewery by brewery. Sometimes bitterness could have origin also in wrong fermentation with contamination, but this is not the case as it is still the same in all batches I have tested so far (and I think that I was there more than 40 times). |
