Few notes: - unless you want to have roasty stout-like character, add Carafa to lautering (or if you do sparge, then to first sparging water). - Weyermann floor malts are not produced by that company, they do not own floor malt factory as far as I know (they used to). That malt comes from Czech and it is rebranded (+ quality is verified by Weyermann of course) - for dark lager you shall be targeting somewhere 4-5% of roasted malts. This is basically my recipe for 12% Stammwurze dark lager (nearly completely black) and it is just 4% of roasted 3.25 kg Floor-Malted Bohemian Pilsner (Weyermann/CZ) 1.95 kg Munich Dark (Weyermann) 1.04 kg CaraMunich III (Weyermann) ++into lautering/sparging: 0.16 kg Carafa I (DE) Weyermann 0.1 kg Carafa III (DE) Weyermann |
