I'm not sure that I understand this - isn't Franken beer fermenting in the lager tank, but much slower than UK cask beer? I thought that the major difference between untergarig and obergarig was that the former fermented and matured slower? Re the use of cask breathers: I'm not sure what CAMRA's position is now, as it seems to change from time to time. IMHO, it is not to be encouraged. The only purpose of a cask breather is to extend the life of the contents beyond its natural life - it's a purely financial matter. Good beer management should avoid the need for cask breathers. I've mainly seen them used where pubs try to have too many beers on offer, thus slowing down the sales time. Re use in Franken: maybe not a proper cask breather but some kellers definitely add CO2 to an open cask to 'preseve' the beer overnight. I remember that we discussed this at length re Witzgall Keller before Nick established that they did add Co2. |
