Wild yeast, when in a spore state, can survive temperatures of 100 deg C or more. If my dentist or surgeon only heated hisf/her instruments to 65 deg C I would go elsewhere. That is not an apples to oranges comparison but I''d say you've been lucky so far. And if a homebrewer gets a wild yeast in the bottle that is a private matter. With a commerical brewery it is a bigger deal. Many swing lock caps in Germany are plastic these days -- at one point that was a problem when importing to the US ( don't know the current regulations) |
