Out of the "big breweries" in Bavaria I would put Schneider and Weihenstephan at the top of the list, the former at the very top, notably for their experimental varients but also the superb original which should be the benchmark of the style. Weihenstephan at the brewery is also especially good. Erdinger is about the worst. More regional producers such as Karg (Murnau), Unertl (Haag) and Hopf (Miesbach) are also well worth trying. For me, the less banana and bubblegum flavours the better, I much prefer spicy and clovy, much more tasty. In Franconia, I don't tend to be a prolific Weisse bier drinker as it's often too gassy for me when on a session, however some standouts would be Staffelberg, Reblitz and Mahr's (interesting range). Having said that if you like the weisse bier's of some of the larger German breweries you would have no problem enjoying the Franconian versions across the board. In terms of symantics, either will do. |
