Didn't stay in utrecht but spent an afternoon there and found it very pleasant. Great cathedral and lots if students giving plenty of atmosphere around the bars. Couple of good beer bars too, nothing extraordinary but solid. One place that must be visited beer wise is de mole brewery in bodegraven. Great food, amazing beer and fabulous if expensive beer shop. Pretty sure its easy to get to from utrecht on the line to leiden. Of course you can also stop off in dusseldorf on the way or back, you could visit all 5 brewpub outlets in the altstadt in an afternoon (though the schumacher stammhaus is my favorite).
