So, as others here have said, there's nothing special about fermenting and lagering U other than leaving the tank open enough so that pressure doesn't build up. Which is what the word 'ungespundet' means.
Primary fermentation for untergäriges Bier lasts up to a week (as brewers have told me and as I've seen on BierTV), then the secondary fermentation / lagering lasts for a couple of months...ideally, at least. Yes, Fred's photos certainly don't show what I think of as "horizontal" tanks! |
