Excessive Carbonation

Not really the point, Jimbo. That may be just an unpleasant (for me very, for other, obviously not) side effect. The point is that over carbonation affects the taste. My conversation with Gernot of Kaufbeuren was most instructive in this regard. If I am not misquoting, he seemed to believe that a fear of under carbonation coupled with the belief by brewers that people liked over carbonated (seems a weird way to describe 'gassy' beer) was the cause. Judging by the way that people wallop down the stuff in Germany (and some comments in this forum), they may be right. I would add poor cellar management and a desire to maximise profits as causes.
